This is the premium Organic Milk on the market. It is low temperature pasteurized, not high temperature pasteurized. High temperature pasteurization (look for UHT Pasteurized on the label) de-natures and reshapes the proteins, leaving them structurally altered from their natural form. These denatured proteins are not recognized by the body, and tend to be inflammatory. This may be one reason for the rise in dairy intolerance, as UHT pasteurization has become increasingly common in the last 10 to 15 years.
Low temperature pasteurized milk has a shorter shelf life than UHT pasteurized milk, but it may be far less inflammatory. We love this cream-on-top milk!
